Pineapple Achar

Assemble the following in a mixing bowl:

2 cups of sliced pineapple

1 cup of sliced onion

1 chopped Thai red chilli

1 small bunch of fresh coriander / Chinese parsley

Dressing: You can either make this in a bowl on the side, or simply chuck everything into one big mixing bowl.

1 tsp fish sauce (substitute: soy sauce)

1 tsp sugar

1 tsp fresh lime juice

Toss everything for 2 min

Sprinkle some toasted peanuts & sesame seeds on top

Transfer to a fancy bowl and refrigerate for 15 min

Put on a pair of shades and serve cool
